      May Recipe of The month:

Old Fashioned Macaroni and chesse

What you will need:

1 1/2 cup elbow macaroni
4 tablespoons butter -- divided
1/4 cup flour
3 cups milk
1 teaspoon dry mustard
3/4 teaspoon salt
1/4 teaspoon ground pepper
Pinch of cayenne pepper
2 cups shredded sharp Cheddar cheese
1/4 cup freshly grated Parmesan cheese
1/3 cup plain dry bread crumbs

Directions:

Heat oven to 375F degrees. Cook macaroni in boiling salted water in large
saucepan just until tender, 8 minutes. Drain in colander and rinse under cold
water. Meanwhile, melt 2 tablespoons butter in large saucepan over medium
heat. Stir in flour and cook, stirring, 1 minute. Gradually whisk in milk, mustard,
salt and peppers. Bring to boil, whisking. Boil 1 minute. Remove from heat and
whisk in cheeses until melted and smooth. Stir in drained macaroni. Pour into
shallow 2-quart baking dish. Melt remaining 2 tablespoons butter, stir in bread
crumbs and sprinkle over macaroni. Bake 30 minutes. Let stand 10 minutes
before serving. Lightly sprinkle with fresh or dried parsely.  Yield: 4 servings.

Optional toppings: Slices of tomatoes and/or bacon. Serve with garlic bread or
French bread.

Canning this year? Try out some of our favorite recipes. Some are old favorites, some
are new ones I'm in love with:

Strawberry Jam -- This is so easy to make, and absolutely yummy! You just may find
yourself eating from the jar. Great to have kids help with.

Pickled Green Beans -- Recently, some galpals and I went to the Lucky Eagle Casino.
While there, we had to-die-for Bloody Mary's. What made it so good you ask, the
pickled green beans. Here is a great recipe I found.

Spring is marching forward. Say good-bye to dull Winter skin, hello bright and fresh with
this lemon and cucumber facial.

Chicken Scratch

Chicken pudding. Don't let the name fool ya! A dish your family will enjoy.

                  Note from Lady Belle Outlaw:

4/09/08 - I need your help! I'm looking to try out some new and/or canning and preserves recipes. Got some old tried and true that you love? Send me the recipe, and if we (me, friends and family) love it too, you just may see it here in my Web-site. Please send by April 20, 2008. Thanks!

3/31/08 - Whew! What a busy month March has been. But, I've been making time to do some canning. My mom says when she was growing up, folks always asked my grandma how much she canned each year. Grandma's reply, "A hundred quarts of everything."  My grandma was pretty amazing with everything.
So far this week I've made two dozen half pints of yummy strawberry jam for friends and family, 6
pints of pickled green beans, and 2 pints of marinated mushrooms. I'll be trying out more recipes. I
always love hearing what you're doing in your kitchen.

These are true authentic recipes, or 'receipts' as they were called back then, from the
1840's to 1890's and many of the recipes contains the actual spelling and slang from
that period. Many of these delicious dishes have been handed down to me from my
family. Whether you plan to belly up to the bar or use the cookstove, I hope you enjoy!

If you have any suggestions, comments or questions, please let me know! Your feedback only makes this site better. Or, if you have a recipe you would like to share, drop me a line, or sign the guestbook.

Please visit again soon, as I am always adding new recipes. Be sure to read my 'note' below to see what I'm trying out in the kitchen.
